Brewed with both barley and rye and aged for three years in French Oak Cognac barrels, on site at our brewery in Dublin.

On draught at Fidelity, Dublin.
Oxblood with garnet highlights and a sandy rim; musty wood, cocoa dust, and brandy on the nose; earthy then balsamic reduction, a thread of tannins, a hit of vanilla, a tart comeback and a tart finish; clean, dry, smooth.

Recalls barrel aged Balsalmic more than cognac or sour. Goes almost chocolaty in the middle.
I don’t love it but it’s actually fun and breaks some truly new ground.
This would slay with food and in a number of non-beer settings.

Wildly successful experiment, I’d love to see Whiplash push the boat out more like this.
