Pineapple & Thai Basil Sour
Brewed with our pals at Big Fan, this tropical sour is a vibrant burst of pineapple, layered with fresh Thai basil for a sweet herbal twist. Pouring a translucent yellow with a vanishing head, the aroma is pure juice—with hints of anise, lemon verbena, and soft white wine from our house souring. On the palate: tart pineapple, a touch of tarragon, and a full, effervescent body that finishes crisp and mellow.

On tap at Underdog, Dublin.
Hazy lemon yellow; peppermint, pineapple rind, lactic tang; big anise hit, sweet melon, gentle yoghurty finish; dry, spritzy, light.

Goes heavy on the Thai basil, giving an almost pastis effect.
Not 100% successful but risky in a way that Whiplash doesn’t do very much anymore.
Interesting + easy.
