Our collaboration with Seattle’s pre-emminent hop masters Fast Fashion Brewing Fast Fashion Brewing has brought one of the most ellusive hops to Ireland that the Pacific Northwest has to offer; the wonderful Anchovy hop variety - only grown on Seagall ranch.
This meeting of mashes has ensured we’ve made the lightest base beers to really make its notes of watermelon, raspberry and pine shine, all complimented with a touch of Cascade
Malt: Pilsner, Wheat, Carapils
Dry Hop: Anchovy Hop Keif, NZ Cascade
EBC: 7
IBU: 17
ABV: 6.5%

Milky straw with loose, steady white foam with rims; fresh cut pineapple, evergreen, mint, and tangerine rind on the nose; canned orange slices, lemon peel, coconut, pine, twig, touch of menthol; soft, smooth, lt-med.
Anchovy, Cascade

So Anchovy is the new-ish (2 years or so) hotness for experimental hops, and all the promised bright candied top notes of raspberry + watermelon sound fun. Unfortunately, what’s going on here is the other side of this variety: woody notes with a speck of coconut.
Add a pungent, dank undertone at the end and suddenly this hop is a bit meaner than expected: the roughest parts of Sabro and Vic Secret. The yeast isn’t bringing much in the way of esters, Cascade is strictly in a supporting role and with just pils + wheat malts, there’s nothing to stop Anchovy from having its way with your palette.
Not undrinkable because it’s 6.5% + has a featherweight body, but certainly not conventionally fun.
Anchovy’s reputation is better than what’s on display here.
