Poors a very pale yellow with an incredible foam, very thick (about 1 1/2 inch) with a lot of head retention. Smells very tart, acidic, citrusy (mandarine, qumquat, lemon). The lactobacillus are very present and they impart a very complex and interesting smell. The taste is very refreshing, with a lot of this lactic quality that we find in the aromas. I would have loved it to be a bit more tart, but despite this, it's a truly authentic berliner weisse like those found in Germany.
