really fun and ambitious beer! i have seen beets in many brews before, but im not sure ever in an ipa, i had to order this when i saw it on tap! ive seen photos of this being clear and light looking, jewel toned and brilliantly purple, but it was murky and hazy and muted when i had it, maybe the end, or beginning, of a keg, a bit sedimented and less refined looking, but still with the obvious beet influence on the color and a decent little head on it. the aroma of this is cool, earthy and slightly sweet from the beets, minerals and an almost rawness to it, very fresh, and hoppy, even bitter apparently right away, light on the grain side, lemon and juniper notes too, super cool with the deeply earthy beets. in the flavor the beers are subtle, behind the hops for sure. bitterness starts early, but the beer is not at all unbalanced or overly aggressive. the beets keep it grounded in the absence of much grain, and if this was a little more cleaned up it would be super light in feel, the carbonation is great but the sediment bogs it down slightly. definite citrus to the hop profile, some pine and weed late, slightly oily, really compatible with the beets, and its on the dry side to finish despite some sweeter notes in the center of it. i love the idea of this, i wish it was a little more tidy when i had it, because it has all the potential for greatness, hope to try a little brighter example of it next time, or even get up to check out the brewery when i am back in the state. this is really neat and inventive beer, beets in ipa, makes sense to me!
