North Star Cowboy Prickly Pear IPA pours a dark copper/reddish color, with a small, but long lasting lacing head. Aroma is filled with pear notes. Flavor has a very smooth, mellow pear notes, then a bit of bitter to finish. Good body and feel. Overall, its big on the pear, light on the IPA.

Glowing, medium orange, with a medium red hue. Tangy, medium light malt aroma. Prickly pear adds a bit of bitterness, to an ample hop bite. The base is like a standard session IPA. Finish is basically a mild bitterness.

16oz can with canning date 5/19/21 into a 16oz pint glass.
L: Pours a light ruby copper tea color with an off-white thin, creamy head. Well carbonated throughout the entire pint. Head edge retention with very minimal lacing.
S: Berries, pear, esters.
T: Semi-tart berries, light stone fruit, black tea, earthy, melon, lemongrass, mystery flower that is close to hibiscus, light bitterness/souring towards the end. It is lightly sweet and there is light bitterness lingering.
F: It has a wet and slightly crisp, medium bodied mouth feel that is lively throughout the drink. It has a medium fast finish that is slightly dry.
O: A curious experimental IPA with cactus flower. It is fresh tasting with flavors that spread out and then quickly tighten back up. It leaves a slight bitter aftertaste that retains some stone fruit and mild tartness. There are no real signature hop or malt sensations. It reminds me of punch from a really big punch bowl.

Clear, bright rosy/ruby red coloring, slim white head.
In the nose: fruity, growing in stature and presence over time, moderate hops, increasingly apparent pears and pricklies.
In the mouth: Starts out slightly tart and very juicy, mild bitterness that grows on the palate. Vibrant, arresting, maybe even delicious. Medium bodied, long mildly hoppy finish. Intriguing balance between bitterness and juicy fruit flavors. I am enjoying this one. It provides me with considerable delights.
