Great example of a gin barrel aged Saison. Some wine character, lots of funk, slight tartness. The closest thing I've found to Hill Farmstead's Saison's in Colorado!

its a shame that these guys really dont have it figured out yet. this is a gin barrel aged farmhouse wild type apparently, but its not very good. on tap at asbury provisions, i took a chance on it, having been let down by a fair few other atom beers by now, and i was again disappointed. its murky and entirely still from the tap. no carbonation at all. the aroma has a little of the botanical gin thing going on, but it also has a really almost caustic acidity that is past mouthwatering to almost chemical, some citrus, but its harsh. the flavor is okay, really not bad, the wood is there, some raw wheat in the mash too it seems, and even a little tolerable funk to go along with the sourness. not as refined as it could be, but its not way off. the gin part is minimal, but its there, and there are other elements here like red apple, mandarin orange, and cut flowers, some nuance as it warms for sure, but its also kind of stinky, way too sour, and just totally flat in the feel, and i cant get over that. these guys present their beer like its up there with the best of them, price points and all, but i have yet to really be moved by one, as much as i keep trying. you have to find a way to make this carbonated, straight up, its just amateur without it. i like the idea a whole lot better than the execution, which has been a theme for me with most of their beer so far...
