Got this beer on a surprise order from Gleba's online store. Gleba is one of the first sourdough bakeries in Portugal (business opened up back in 2016) and they're currently making world class bread. This beer, created in a close collaboration between Musa (the brewery) and Gleba (the bakery), is an epythome of food recycling as the malts that are used to brew beer are then used to bake bread. That bread is then used on this beer. I noticed that this is not the first time I've seen this in craft beer as I've seen it, at least, between restaurant Amass and their brewery (now closed) Broaden & Build.

Poured into a BrewDog stemmed glass.

A: Appearance is very yellow, opaque, with a pretty good white head showing 1cm thickness.
S: The aroma is very toasty as all wheat-based beers are. Notes of bread, clove, autumn leaves, sweetness all round, with a hint of citric notes as most witbeers have.
T: The taste is pretty interesting as the sweetness is mild and connects pretty well with a round bitterness and mild to low acidity. It's highly drinkable and sure shows the taste of bread.
M: Body is medium. Carbonation is spot on. Alcohol is unnoticed. Bitterness is mild.
O: Not only is this beer pretty good, it also embodies the respect for ingredients and the nature (and need) of recycling. Brewing, we'll save the world.
