Pilsner made with 100% NYS grain and hops. Fermented slow and cool with our house lager yeast in stainless steel for 4 weeks. This beer is a reflection of the small farms we support and the time we spend getting to know our ingredients.

Slightly hazy gold pour with a one-finger white head that disappears quickly. Classic biscuit nose. The flavor is robust at first, a blend of biscuit, bread, lemon citrus and green apple. After a few more potent sips, the flavor becomes more muted. A more consistent robust flavor profile would have boosted my rating to a four.

16 oz can canned 1/4/24 into a pokal.
L: SRM 2 Pours almost clear light dent corn yellow gold with a thin white head that recedes to nothing, low fine steady carbo, no lacing at all.
S: Lightly floral, a hint of honey, over ripe fruits.
T: Lightly rich fruit tastes, pear, sweet apple, light distant ripe citrus, a trace of citrus zest, tardy and subtle bread dough notes. It is slightly sweet & rich with bitterness in the background.
F: Brisk medium bodied feel that becomes ever so smooth and has a medium length finish that is mildly drying at most. It is gently dense.
O: A slightly rich tasting Pils that is satisfying. More carbonation might help this one along with some crispness. It is good to support a brewer who keeps the business very local right down to the ingredients. The beer is tasty and is good in its style.

A New York State Pilsner, or, 100% NYS derived ingredients.
Mostly clear yellow and white foamed pilsner. No head retention unfortunately. Clarity is very good.
First aromatic impressions are a good harmony of Pilsner malt and Noble hops. Everything does a very good facsimile.
The first and foremost (and most important) for any good pilsner like this is it's use of noble hops. They are very prominent throughout, more so than the malt, and in spite of a somewhat lacking malt character I think the flavor is very well-spaced. More hop driven than any other aspect. Nothing but Noble hops, but that is okay here.
There isn't anything more than a token bitterness. The carbonation is light but just enough to avoid a noticeable lack of character.
I don't know how Pilsner making breweries from around the world that have honed their craft for years would think of a scrappy farm brewer in NY making a fairly decent one themselves. This certainly proves it is possible and the results are promising. I'm sure it took quite a bit of trial and error, but as it stands now I find it enjoyable and geographically impressive.

A: The beer is clear yellow in color and has a slight amount of visible carbonation. It poured with a short white head that quickly settled down, leaving a thin collar around the edge of the glass.
S: Light aromas of biscuit and cracker malts are present in the nose.
T: The taste follows the smell and has lots of flavors of cracker malts along with a light to moderate amount of bitterness.
M: It feels light- to medium-bodied, very clean and a bit dry on the palate with a moderate amount of carbonation.
O: You don't get much in the way of aromas and flavors of hops in this pilsner but the taste has a nice dose of bitterness to negate any sweetness that the malts might contribute.
