Imperial blonde ale aged in Barbados rum and Woody Creek rye whiskey barrels with chocolate, coconut, and almond.

After training in Barbados rum + Woody Creek rye whisky barrels, Coco Fantasma was blended into a silky smooth, barrel-forward canvas. From there she earned her nickname “Coco” with the standout addition of Mexican cocoa nibs, softly toasted coconut, and slowly roasted almonds – her superstrength is that these ingredients amplify her complex barrel beauty. Coco Fantasma is a hauntingly harmonious combination of wrath and indulgence.

500 ml bottle into a snifter. 2020 edition. Had 7/3/21.

Pours a fairly clear copper color, with a short, quickly dissipating head and a little slick foamy lacing. Aromas of almond, coconut, chocolate, caramel, oak, some bourbon, light rye whiskey. Flavors of coconut, bourbon and rye whiskey, caramel, light oak, some almond and chocolate, malt, some dates. Smooth, a solid medium body, appropriately carbonated.

There’s a lot going on here, but with the exception of the rum barrels, everything shows really well and it all plays nicely together. Really enjoyable.

Murky orangey amber body with a white ring. Smell has the barrels front and center, elevating the chocolate and coconut in particular. Taste starts with the chocolate, coconut, and blonde malt, almost like a baked dessert, but out of these elements come the barrel in all of their glory, the rum pushing molasses and the whiskey pushing caramel. The almond is what makes this work: bridging all the flavors together into a very cohesive and sneaky complex whole without getting overly sweet. Feel is medium bodied with decent booze warm, smooth. Amazing how it never gets too out of control, impressed how they pulled this off, points for uniqueness, stout flavor complexion without crushing weight. The wife loved it.
