16 oz can acclimated to 54°F and poured into a tulip glass.
Pours a nice mild shade of pink, closest I could match on a basic Google search is hex code FC9483, a lovely color. Has a very short head, the same color pink but much more saturated. Some clumpy lacing, and huge bubbles in the head, these are the kind of bubbles that are created when you try to mix water with cinnamon, which this beer contains. The lacing being clumpy would be for the same reason. Additionally, I can see particles of cinnamon floating around in it.
Initial aroma is very sweet, fruity, white cake baking, vanilla extract, and a bacteria strain funk, hugely similar to kefir specifically. There's a smell of cotton candy that I don't think I would notice if I didn't know what I was drinking. After agitating the dairy bacteria strain amplifies then quickly fades, being replaced by all the previous scents, dominated by vanilla.
Initial taste before swallowing is sour, sweet and candy like. After swallowing I'm hit with that dairy bacteria, heavy toasted coconut, vanilla extract, light cinnamon, and more heavy sweetness. It's hard to notice the cinnamon if you're not looking for it. I'm really loving this bacteria strain.
Mouthfeel is sort of full but at the same time very soft. Carbonation fades but doesn't seem to make much of a difference in the experience. It did also start to hurt my enamel rather quickly.
Overall this is incredible. I kind of feel bad rating it so high because it's so sweet and therefore doesn't feel like drinking beer to me, but oh well. The flavors are balanced fairly well, and work well together. I usually actively dislike too many flavors in one beer but it works. In my opinion the dairy sourness paired extremely well with the added flavors. This particular bacteria strain is extremely good, would be great in an unflavored sour, sweet or not. Additionally this is likely the nicest color of any beer I've ever seen.
It's expensive, but I will CERTAINLY purchase again, as well as research the other beers produced by the company.
