We transferred a small amount of our Australian sparkling ale into barrels and added pineapple and Brettanomyces claussenii (a wild yeast). After resting in barrels for three months, the beer picked up a hint of coconut from the wood and fruitiness from the B. claussenii which compliments the pineapple nicely. An elegant yet lively ale.

A barrel aged brett beer with pineapples, and while its quite subtle in a lot of ways, I really liked this, definitely one of the most ambitious beers on the menu here, and they had a lot of them. The pineapple has a cooked thing to it, almost cakey with the grain on this, but its not sweet enough to be desserty, and there is a little tang, some natural acidity from the pineapple and some funky pucker at the end too, but way more bretty than bacterial. A little funky, not as developed there as it could be, and like a little odd to me. The pineapple and the wood go nicely together, they are there from start to finish, and there is a fruity white wine vibe when they combine. I don’t love the brett aspect of this overall, better in the nose than the taste, but the beer on the whole is awesome. Subtle notes of coconut, lemongrass, and even peach in here too, tropical but different, almost more a cocktail than a beer in some way. itd be cool if the brett was more developed and farmy in here, but its drinkable in its current form. fun stuff, these guys are on it!

A: The beer is slightly hazy orange yellow in color and has a light to moderate amount of visible carbonation. It poured with a thin white collar around the edge of the glass.
S: Moderate aromas of funk are present in the nose along with hints of pineapples.
T: The taste is sour with notes of pineapples and hints of coconuts.
M: It feels medium-bodied on the palate and has a moderate amount of carbonation.
O: This beer as an interesting mix of pineapples and coconuts. It gets better as the fruity aromas and flavors develop more as the beer warms up.

A: Pours a hazy golden apricot in color with moderate amounts of active visible carbonation rising along the edges of the glass and moderate amounts of orange + burnt orange + golden yellow + bright yellow colored highlights. The beer has a finger tall dense sudsy foamy off-white head that slowly reduces to a large patch of thin film covering a little more than 90% of the surface of the beer and a medium thick ring at the edges of the glass. Moderate amounts of lacing are observed.
S: Slightly stronger than moderate aromas of funky earthy barnyard brett over the top of light aromas of pale + biscuit malts with minimal amounts of sweetness. Light to moderate aromas of tropical/pineapple and light aromas of cocount. Hints of oak/woodiness as well.
T: Upfront there are light flavors of pale + biscuit malts with minimal amounts of sweetness. That is followed by slightly stronger than moderate flavors of earthy funky barnyard brett with a light presence of oak/wood. Finally there are slightly heavier than light flavors of overripe tropical/pineapple and light flavors of coconut. Minimal amounts of bitterness but a light amount of tartness in the finish which lingers.
M: Medium bodied with moderate amounts of carbonation. Slight hints of acidic prickliness in the finish.
O: Easy to drink with well hidden alcohol and just enough tartness. Very enjoyable with the wood, brett, pineapple, and coconut combining for a very interesting flavor and aroma. Best aroma of any beer I tried when visiting Fifth Hammer. Flavors develop additional complexity as this beer warms up.
