-------Update--------
Like everything from Holler these days, not what it use to be. Basically really sweet with some plastic like phenolic character. Seems a bit more watery than it use to be as well...shrug.
--------------------------
Have had several times at the brewery and a few places around town. Just now getting around to reviewing it.
A: Pours with a nice haze, golden/orange color. A dense two finger white head rises with a two finger pour. Excellent retention and lacing for days.
S: At first an earthy and phenolic/peppery spice hits me. Some fruity esters like banana, and sweet malts. Very nice.
T: Like the nose, the phenol's are present but never over done or too plastic like. Peppery and earthy, with fruity esters again. Banana, sweet malts, Belgian sugar, and over ripe fruits. I like it.
M/D: A medium to full body. Moderate carbonation that is still fairly crisp and smooth at the same time. A very nice example of a Belgian Triple. Not overly phenolic, not over;y sweet, and everything is in good balance. Something I have come back to often, and will continue to.
The Belgian IPA, Saison, and Triple all share some similar characteristics,I am sure from the Belgian yeast used. They are all well made and enjoyable in their own right. Fans of Real Ales Devils Backbone should enjoy this one, as I do. The Saison without a doubt is the better of the Belgian styles they make, but this is really good none the less.

Putting words to this review from a few years ago
Poured from 16 oz twisty into tulip, good 1+ finger cream colored head, recedes pretty quickly, but nice lacing. Hazy bright golden/orange in the glass. Juicy fruit, spice and standard belgian esters on the nose. Taste is initially sweet, then fades into the juicy fruit, candy sugar, spicy/peppery and finishes up semi dry, with a lingering earthiness on the palate. Personally would like a dryer finish on this, but drinks well on a nite when it seems we have finally entered fall here in Houston.
