Oostende 18/7 2023. 33 cl bottle from Spar, Langestraat, Oostende. As “De Meester Maître Quad”. Black label with pale orange circle with the name of the beer.

Pours opaque dark brown with a mid-sized, light beige head. Stable. Settles as thin layer of foam just covering the surface of the beer. Moderate lacing.

Aroma is medium intense with a sweet malty, slightly sugary odor mingling with a subtle tart scent. Toffee, caramel, raisins, plums and potent alcohol. Whiff of tart currants.

Strong carbonation. Medium thick, oily, lively and tingling texture. Almost fizzy.

Flavor is fairly intense with a strong sweetness followed by a medium strong tart sourness. Aftertaste is sharp and tart with a boozy sweet undertone. Lingers for a while. Finish is rather dry.

Dark and strong with a tart edge.

Bottle at Las Buenas Pulgas, served in a trappist glass. Dark brown color, small beige head with short retention, creamy lacing. Aroma of caramel, dried fruits, chocolate and some vanilla. Medium body, rough texture, average carbonation. Taste of caramel, chocolate, dried fruits, brown sugar. Very good.

330 ml bottle into chalice, no bottle dating. Quick gusher upon opening, didn't lose any. Pours hazy very dark brown color with a 1-2 finger dense and rocky tan head with awesome retention, that reduces to a nice cap that lasts. Thick soapy lacing clings around the glass, with a moderate amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big raisin, plum, prune, fig, cherry, date, apricot, red apple, peppercorn, clove, caramel, brown sugar, brown bread, chocolate, toasted biscuit, herbal, floral, and grass; with lighter notes of nuttiness, coffee, licorice, toffee, molasses, banana, and yeast/roast/toasted earthiness. Damn nice aromas with great balance and complexity of fruity/spicy yeast, dark/roast/bready malt, candi sugar, and light-moderate earthy hop notes; with great strength. Taste of big raisin, plum, prune, fig, cherry, date, apricot, red apple, peppercorn, clove, caramel, brown sugar, brown bread, chocolate, toasted biscuit, herbal, floral, and grass; with lighter notes of nuttiness, coffee, licorice, toffee, molasses, banana, and yeast/roast/toasted earthiness. Light herbal/grassy/roast bitterness, yeast spiciness, and slight yeast tang/tartness on the finish. Lingering notes of dark fruits, cherry, apricot, red apple, peppercorn, clove, caramel, brown sugar, brown bread, chocolate, toasted biscuit, nuttiness, light coffee/licorice/molasses, herbal, floral, grass, and yeast/roast/toasted earthiness on the finish for a while. Awesome complexity, robustness, and balance of fruity/spicy yeast, dark/roast/bready malt, candi sugar, and light-moderate earthy hop flavors; with a great malt/bitter/spiciness balance, and zero cloying/astringent flavors after the finish. Lightly increasing dryness from bitter/spiciness and carbonation. Medium-high carbonation and medium-full body; very smooth, creamy/bready/grainy, and lightly sticky/chalky/tangy balanced mouthfeel that is great. Minimal warming alcohol for 9.5%. Overall this is an awesome quadrupel style. All around great complexity, robustness, and balance of fruity/spicy yeast, dark/roast/bready malt, candi sugar, and light-moderate earthy hop flavors; very smooth and amazingly easy to sip on for the big ABV; with the mildly bitter/spicy/drying finish. Very rich and complex malts/candi sugar; with great balanced yeast complexity, and balancing bitter/earthy hop flavor presence. A really enjoyable offering, and spot on style example.
