Quiet Time was brewed to a starting gravity of 10° Plato and comes in at just 4% ABV. Drinkability and flavor are critical in the country that drinks more beer per capita than any other - delivering on the latter is easier said than done within the framework of a relatively small beer. Quality ingredients and countless process decisions yielded a beer we think hits the mark. Quiet Time was made with Valley Malt Jalowetz Pilsner malt, a unique, local malt crafted based on a historic Czech brewing text and one that we’ve learned to use in decoction mashes with great results. Our hand-selected Czech Saaz hops were paired with a couple slightly more expressive Czech varietals: Kazbek and Sladek. For 8 weeks, while Quiet Time was fermenting and lagering, we’ve been eagerly awaiting today and now, we’re so excited to share the result.

Can dated 12/18/24 from BIF '25 @roguer
Pours a dark cola color with amber hues in the light and a one finger off-white head. Head dissipates quickly and leaves minimal lacing. Smells of roasted malt and spent coffee grounds. Taste echos the nose exactly and introduces some bready notes. Moderate carbonation, thin mouthfeel. Finish is roasty with minimal hop bitterness.

Pours a dark cola brown and settles in the glass as black with a creamy light tan head that provides significant lacing and serves as a cap on the beer the entire time it’s in your glass. Absolutely gorgeous beer.
The nose has a bit of roasty char, some cocoa, and grassy hop notes, and those notes are where the taste lands, with the cocoa and roasty char forward and the hop notes at the back of the palate.
The mouthfeel is nicely crisp, adding to the drinkability of the beer and placing it squarely in world class range, IMHO.

Can from the brewery in Salem, CT. Pours very dark amber brown and is opaque/black in the glass, two fingers rocky tan head that sticks around, nice lacing; smell is crusty brown bread, funky grains, mild coffee and cocoa, mild grass; taste follow the nose with soft brown/molasses bread, funky grains, mild roasted malts/coffee, mild cocoa, grass on the finish; feel is light, mild carbonation, dry finish. A well balanced roasted malts and grassy crusher.

Enjoyed on tap at the source, served as a slow-build side pour.
Rich, roasty, slightly fruity, and a touch nutty. Incredibly flavorful for the ABV. Unbelievably creamy and smooth.

Appearance: A quick bubble show creates a one finger ecru head over the tea colored liquid; webby lacing
Smell: Toasted pumpernickel bread along with roasted grain and caramel malt tones
Taste: Some underlying caramel sweetness presages the toasted pumpernickel and roasted grain flavor; tobacco and grassy tones, in the middle, with a dry and slightly ashy finish
Mouthfeel: Light to medium body with moderate to high carbonation
Overall: It is nice to see this style being brewed more frequently and this is a good example to set a standard

Poured from a 16oz can stamped “CANNED ON 11/30/22" to a Nonic at fridge temp.
The body is dark, almost opaque brown/black with some reddish brown on the edges when held to the light. The head is a beautiful puffy tan about ¾”/18mm high.
The aroma is of composting leaves, tobacco with a bright note I cannot identify.
The taste is a malt lover’s delight, but hops are not completely hiding. The hops make a cameo appearance mid-taste, then they are gone to a dry, chalky finish.
Mouthfeel is light, but the carbonation is unique. The bubbles are plentiful in the mouth but seem smaller than normal if you can imagine that.
I like almost any dark beer that is dry. This one is super dry so it's fine by me.

Quiet night, holy night. This pours a dark brown with lush khaki head. You might not hear lush and khaki together in a sentence often, but I am a Michigan grad and Michigan football fan, so it should make perfect sense. Not much in the form of aroma. Maybe some floral hop character. Maybe. There's some roast, oatmeal, and nice dryness. It's a little lacking in depth and this is where I think the single infusion vs decoction debate comes to a close. The flavor is on point, but there's some richness missing. I like this.

Pours dark, dark brown with thick dense head and good head retention. Aroma is rich malts, fruit, and dark bread. Smells delicious. On the tongue it's deep malt flavor with a tiny hint of roast. Medium bodied.
