Allegro was born from our desire to explore and share the versatility and approachability of spontaneously fermented ales beyond the context of lambic-inspired brewing. By (1) starting with a grain bill akin to saison and using just a small percentage of unmalted wheat, (2) following a modern, single-infusion mash regiment, and (3) using a judicious amount of fresh (not aged) hops, we end up favoring an expressive, yeast-driven (but still 100% spontaneous) fermentation that develops quite differently from our other Music Vale beers. After 18 months in 750L oak casks Allegro was blended and split three ways, with the untreated base beer being bottled in May.

This one pours a reasonably hazy golden yellow-ish orange color, with a small white head, and lots of lacing.
This smells like tart white grapes, sourdough bread, lemon, apricot, tea, and citrus.
This is really excellent stuff. It's super complex, with lots of interesting yeast-driven turns in the flavor profile. I almost get a citrusy and spicy tea-like flavor, with some wheaty sweetnes, lots of stone fruit and grape, wine barrel, funky ripe lemon, and oak.
This is light bodied, pretty acidic, but not overwhelmingly so, with a nice drinkability.
Fox Farm just continues to be one of the most underrated and quietly excellent breweries in New England.
