Allegro was born from our desire to explore and share the versatility and approachability of spontaneously fermented ales beyond the context of lambic-inspired brewing. By (1) starting with a grain bill akin to saison and using just a small percentage of unmalted wheat, (2) following a modern, single-infusion mash regiment, and (3) using a judicious amount of fresh (not aged) hops, we end up favoring an expressive, yeast-driven (but still 100% spontaneous) fermentation that develops quite differently from our other Music Vale beers. After 18 months in 750L oak casks Allegro was blended and split three ways.
Allegro with Pomace was re-fermented on the skins from a lightly pressed blend of white grape varieties grown by our family here on Music Vale Road. There’s a great deal of character left behind when grapes are pressed prior to fermentation - folks need look no further than skin-contact white wines to understand what the pomace has to offer. Gentle tannin-structure, stone fruit, and a little earthy spiciness all mingle with the base beer in a really nice way.

750ml bottle served in a tulip. Bottled on 06.28.21. Pours a translucent gold with a tight, two inch, creamy, bright white head. This beer is absolutely beautiful in the glass. Nose expresses light, fruity esters and hints of acetic acid. Taste consistent with nose; however, there are some light vinous/grape qualities that cut across the flavor in profile. Finish is slightly vinegary. Mouthfeel is light in body with a mild acidity. Carbonation is pleasant and smooth - just shy of lively. Overall, a top-notch wild. One of my favorite of the series. These beers can be a bit sharp at first, but they mellow nicely with age.

This one pours a slightly hazy golden orange color, with a small head, and a bit of lacing.
This smells like stone fruit, white wine, earthy funk, lemon, and light acidity.
This is really quite nice, as the grape addition is very thoughtful and expectedly subtle, as the grapes are pressed and added as pomace. There's some stone fruit, blackberry, and typical white grape flavors, with a touch of oak, and earthy, lightly spicy funk. There's a soft lemony acidity that never gets overwhelming.
This is light bodied, but full, almost creamy, at the same time, with a very nice drinkability and a manageable sour level.
This is really well done. And on a side note - the labels for this new Music Vale beers are really excellent.
