Allegro was born from our desire to explore and share the versatility and approachability of spontaneously fermented ales beyond the context of lambic-inspired brewing. By (1) starting with a grain bill akin to saison and using just a small percentage of unmalted wheat, (2) following a modern, single-infusion mash regiment, and (3) using a judicious amount of fresh (not aged) hops, we end up favoring an expressive, yeast-driven (but still 100% spontaneous) fermentation that develops quite differently from our other Music Vale beers. After 18 months in 750L oak casks Allegro was blended and split three ways.
Allegro with Paw Paw was re-fermented on paw paws from our friends Huntsbrook Farm. For years we’ve been stockpiling any amount of precious paw paws Farmer Digga has been able to sell us – processing and freezing the flesh in hopes the right project would present itself. Despite the generous fruiting rate, the paw paws lend subtle and complimentary vanilla custard and creamy mango notes. In both cases, our intent with the fruit was to accent and highlight the inherent qualities of the base – not dominate and obscure the beer we care so much about. In that way, we couldn’t be happier with these unique expressions.

Bottle 07.01.21. 750ml bottle served in a tulip. Pours a lovely straw gold with a translucent clarity and a fizzy, three-finger, bright white head that quickly sizzles and popes as it disperses into a sudsy slick. Nose is lovely and delicate - hints of yeast, citrus and soft tropical notes. Taste follows nose. There’s definitely a light paw paw fruit presence in the background; however, if you haven’t had the fruit before you’d most likely attribute it to mango. Mouthfeel is light in body with a spritzy ,bright carbonation and an assertive acidic astringency. This beer is so good. I hope they make another batch!

This one pours a fairly hazy golden yellow color, with a small head, and a little bit of lacing.
This smells like stone fruit, passionfruit, white wine, and oak.
This is pretty sour, but not aggressively so, with the paw paw giving off major stone fruit and passiofruit vibes. There's a lot of lemony acidity, and a pretty strong wine barrel presence, with some nice oaky bitterness on the back end.
This is kind of acidic, but still reasonably drinkable, with a nice smooth and puckering finish.
This whole series has been really excellent, and I really enjoy the direction that their wild ales are taking lately.

This is pretty sour, but not aggressively so, with the paw paw giving off major stone fruit and passiofruit vibes. There's a lot of lemony acidity, and a pretty strong wine barrel presence, with some nice oaky bitterness on the back end.
This is kind of acidic, but still reasonably drinkable, with a nice smooth and puckering finish.
This whole series has been really excellent, and I really enjoy the direction that their wild ales are taking lately.
