Just as our first three-year blend of lambic-inspired spontaneous beer was coming together, we took receipt of freshly-emptied and uniquely characterful barrels from France. For this encore presentation of the blend, we finish Triolet in Muscat de Rivesaltes casks.

This one pours a slightly hazy golden yellow color, with a small head, and lots of lacing.

This smells like spicy and herbal funk, oaky wine, and apricot.

I really liked both of these Altra Volta variants, I can’t honestly say which one I preferred. There’s lots of stone fruit and wine grape flavor, with a prickly but not unpleasant acidity, and some nice oakiness.

This is lighter bodied, and definitely a slower sipper, but with a nice drinkability.

Fox Farm’s mixed fermentation beers are always so good.

375 ml bottle split with a friend, poured into a red wine glass. Pours a lightly cloudy straw yellow with a fluffy head. Aroma and flavor feature light funk, moderate green apple acidity, oak tannins, white wine, with hints of vanilla, mustiness, and stone fruit. Much less aggressively funky and acidic than, say, a 3F gueuze - a truly beautifully balanced beer, almost too easy to drink for a beer that ought to be savored. Mouthfeel is soft and moderately carbonated with fine bubbles, and might be the most impressive aspect of the beer. Overall a fantastic American-made lambic-style beer. Fox Farm can do no wrong.

375ml corked and capped bottle served in a tulip. Pours a bright, honey-gold hue with a tight, quarter inch, bright white head that sizzles and pops as it recedes into a thin, clustered, slick. Nose is lovely - hints of apricot, must and oak. Taste is quite pleasant; however, quite acidic. Elements expressed in the nose are a bit overwhelmed and only express lightly in the middle, while the finish leaves more residual acidity. Mouthfeel is light in body with a bright carbonation and an assertive astringency. Overall, a very nice Wild Ale. I love everything that FF puts out. If the acidity was a little more toned down to allow the delicate characteristics out, this would be a 4.50

Funky, sour, complex. Oaky, potent, and complex. This is an American sour that reminds me of the best of Cantillon or Drie Fonteinen. It is without question in that territory.

Tasting notes of apricot, white grape, oak, vanilla, mushroom, apple cider vinegar, pear. An absolutely delightful beer.
