Bespoke took an unlikely, meandering path that lead to a place that’s better than we could have imagined when we set about creating a farmhouse ale inspired by our favorite cocktails. The base from which it started was a Bière de Garde fermented with our house mixed culture. After some time in one of our oak foeders, it was transferred into bourbon barrels just emptied of Echos our Baltic Porter - except we deliberately left a small portion of Echos in each barrel to add to the blend. After many months, those barrels were once again racked into the following: a freshly-emptied bourbon barrel, a lovely cherry brandy barrel and (finally) an incredibly aromatic Amaro barrel. Those contents were reunited months later in one of our blending tank.
