Allfort is our take on the historic style of Adambier. Much debate and mystery surrounds the style and those few modern interpretations, including this one, likely bear little resemblance to the original - like a memory of a memory. Still, there’s much to be inspired by in the reading of its history and the idea of a strong, malt-forward (but well-hopped) Northern German ale certainly pulled us in. Ours was made with a complex malt bill that included German and English base malts, Munich malt, and a variety of smoked and crystal malts. Fermented with our house Kölsch yeast, we lagered Allfort in one of our horizontal tanks before transferring to (in equal parts) Apple Brandy barrels, Bourbon barrels and stainless steel. After nine months those components were reunited. The unique combination of raisin/fig with smoked malt and barrel character makes for an absolute treat and quite unlike any beer we’ve made before.

Poured from a 12oz can dated 09/11/24 into a snifter glass. Batch #1.
Look: A deep mahogany color in the glass, with a creamy off-white head dissipating as quickly as it forms.
Smell: Rich, smokey malt aromas are complimented perfectly by a distinct barrel woodiness. An apple note dances in the background.
Taste: Follows the nose, and adding sweet notes of caramel and toffee. The apple brandy character is reserved as a sweet tartness.
Feel: This beer is smooth. It washes over the pallet with a restrained tickle of carbonation.
Overall: After having this both on cask and from the can, both experiences are uniquely excellent. Whereas the cask pour showcased a beer that tasted like buttery whisky, the can pour tastes more like an apple forward barrel-aged American barleywine. Fantastic!

I am sampling a cellar temp 12 oz can purchased from the brewery recently. Canned date of 9/11/2024.
Pouring into my snifter.
The beer pours a cola brown color and has a dense beige head of about .5 cm. This foam fades to a thin edging a little bit after the pour is complete.
Aroma on this beer is rich and malty with some toffee and brown sugar mixing with a bit of apple and hints of smoked malt too. No hop character, and I dont get a ton of bourbon, nor is the beer boozy on the nose.
First sip reveals a medium body with fine and slightly prickly carbonation. Texture is smooth and the beer drinks very easy.
Flavor is sweet malts with some caramel and brown sugar moving to a bit of sweetened apple notes and finishing dry and smokey. No hop character and not boozy on this beer. Im glad the smoke isnt overpowering on this beer and enjoy the apple brandy sweetness too. Glad to have tried this interesting combo of a beer. Id drink it again.

Appearance: Pours a fairly clear tea colo with a one finger khaki head that fades to a film; speckles of lacing
Smell: Caramel, raisin, figgy pudding and tobacco/charred wood with the Apple Brandy barrel being a bit more discernible than the Bourbon barrel
Taste: Caramel, raisin and figgy pudding flavors forward with the tobacco and charred wood elements emerging; through the middle, the Apple Brandy and Bourbon barrels overtake the flavor profile but the sweeter elements remain along with the tobacco
Mouthfeel: Medium to full body with moderate carbonation; some warmth in the gullet
Overall: I have read that this beer may be a tip of the hat to Hair of the Dog; I have had both Adam and Matt (which was aged in Bourbon and Apple Eau de Vie barrels) and can see the similarities but this beer has some unique aspects, as well

12oz can served in a tulip. Pours a deep mahogany hue with a tight, two-ginger, tan-colored head. Nose expresses fruity esters - perhaps, apples and figs. There’s also a kiss of smoke and booze at the back. Taste follows nose; however, booze and smoke is amplified across the middle and finish, leaving a mild, lingering, medicinal bitterness between quaffs. Mouthfeel is light-medium in body with a mild carbonation. Overall, a really interesting beer. I’d like to see what some time would do with this beer.
