Blushing Star

A single puncheon of 2-year-old golden sour aged on 3 lbs/gallon of Blushing Star peaches. We intentionally selected neutral base sour to showcase the peaches. This is our first time working with Blushing Stars, one of few Palisade white peach varietals. The white flesh is sweeter and candy-like and the blush red skins added a fair amount of color to the beer - it's almost pink in hue. Tasting notes: peach-ring candy, pink Pez, lychee, Sweetart minerality. From the aroma through the residual flavor on the palate, the beer compliments all elements of the peach: tannic skin, juicy/sweet flesh, tart fruit clinging to the pit and the pit itself.
