Gil's is small. It's got a bar with just a few seats, a few tables, and an outside patio. For vibe, think "small neighborhood coffeehouse" except they are serving beer. It's clearly a neighborhood joint, and it's kid and dog friendly.
Gil's has 24 taps, with pretty good variety, mostly from Oregon breweries and some from CA (like Stone). They do a significant growler business, in addition to being a place to sip and eat.
The food is modest, with just a small number of options, but it's pretty good: 6 different sandwiches, a rice bowl, kimchi, and a hummus platter.
While Ashland has three breweries (one excellent and large, one nanobrewer, and one other), I haven't previously found a good place to just drink a variety of craft beers from a variety of quality brewers. Gil's fills that niche nicely, and I'll be back on other visits to this town.

Update 6/13/17. I've gone back twice on this year's trip to Ashland. I'm updating the scores, as the selection and quality of the beers is significantly better than last year. They had a couple of terrific sours on tap, as well as an Epic BA Big Bad Baptist with Blue Coffee, which was great. The food selections were a bit expanded also.
