Our dark wild ale in its purist form. Blend #1 of this beer is made up of 2 barrels with an average age of 8 months in oak, half of the blend was fermented with lab cultures and the other half with our wild house culture of yeast and bacteria.
This beer smells like toasted danish rye bread upfront with a hint of powdered jam doughnut. The flavour has great length and lingers on the palate for ages. It starts with firm citric acid up front that mellows into clementine and orange before finishing with dark chocolate and toasted almond.

Pours a very cloudy, deep mahogany coloration that turns blood red when held up to the light, with a tiny, fizzy head that soon fades away completely. Smells of quite bready, slightly roasted malt, some chocolate and dark/citrus fruits, as well as blue cheese funk and musty oak. Taste is a great balance of bready, slightly roasted malt, distinct dark, estery fruit and red berries, with notes of plum, fig, apple, cherry and redcurrant, blue cheese funk and musty, tannic oak, with just a hint of chocolate and balsamic vinegar, as well as good underlying lactic/citric acidity. Finishes with a medium tartness and some bready malt, red berries and musty funk and oak lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.
This actually kinda reminds me of a Flanders Red/Brown, in a really good way. There's a great balance of bready malt, dark/red fruit, musty funk and tannic oak to this, although the citric acidity may be just a touch overdone here, which really doesn't make this any less enjoyable though and adds a bit of fresh, spritzy feel to it. It's supposed to be a Wild Ale rather than a Flanders Red/Brown after all. Overall, a really interesting and well-balanced take on the style that is complex, yet well-balanced, with some great malty, fruity, woody, tannic, funky and acidic notes to it.
