A pale, somewhat spicy, dry, and strong Trappist-style ale with a pleasant round malt flavor and firm bitterness.

32 ounce crowler into chalice, filled on 3/3/2019. Pours fairly crystal clear deep golden/amber color with a small dense and cream off white head with great retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big lemon, orange, peach, plum, pear, apricot, cherry, red apple, white grape/wine, peppercorn, honey, candy sugar, and toasted biscuit; with lighter notes of banana, bubblegum, clove, herbal, wood, floral, grass, and yeast/toasted earthiness. Damn nice aromas with great balance and complexity of fruity/spicy yeast, candi sugar, bready malts, and light-moderate earthy hop notes; with great strength. Taste of big lemon, orange, peach, plum, pear, apricot, cherry, red apple, white grape/wine, peppercorn, honey, candy sugar, and toasted biscuit; with lighter notes of banana, bubblegum, clove, herbal, wood, floral, grass, and yeast/toasted earthiness. Light-moderate herbal, woody, floral, grassy bitterness; and peppery yeast spiciness on the finish. Lingering notes of lemon, orange, peach, plum, pear, apricot, cherry, red apple, white grape/wine, peppercorn, honey, candy sugar, toasted biscuit, light banana/bubblegum/clove, herbal, wood, floral, grass, and yeast/toasted earthiness on the finish for a while. Awesome complexity, robustness, and balance of fruity/spicy yeast, candi sugar, bready malts, and light-moderate earthy hop flavors; with an awesome malt/bitter/spiciness balance; and no cloying/astringent flavors after the finish. Light-moderate increasing dryness from lingering bitterness and spicy yeast/alcohol. Medium carbonation and medium-full body; with a very smooth, creamy/bready/grainy, and fairly sticky mouthfeel that is great. Mild increasing warmth of 10% after the finish. Overall this is an awesome tripel. All around great complexity, robustness, and balance of fruity/spicy yeast, candi sugar, bready malts, and light-moderate earthy hop flavors; very smooth and dangerously easy to sip on for the big ABV, with the mellowly bitter/spicy/drying finish. Perfectly balanced Belgian yeast complexity, candi sugar, and bready malt flavors; with nice earthy hop presence/balance. Not overly sweet/heavy from lingering bitter/spicy dryness. A really enjoyable offering, and impressive spot on style example!
