Little Foo is a rustic farmhouse ale that we age and solera in one of our 20 barrel American oak foeders. The beer is slightly tart with notes of lemon and apricot. The American oak adds a hint of vanilla that rounds the beer out and allows our house mixed culture to dance.

Lightly hazy, pale straw color. No head to speak of.
This is a surprisingly stellar American farmhouse ale. Light and crisp, full and complex. Really enjoyable

Funky, slightly cheesey aroma. Tartness rides underneath that.
Taste is less cheesey but still has an element of barnyard funk alongside the lactic acidity.
Mouth feel is really excellent. Full and soft and crisp.

3yo bottle: No expression of Belgian Saison- dryness, spiciness are absent. Carbonation levels are low. Raw oat may or may not be an ingredient, but the product feels like raw oat wort. Unfortunately this did not age well.

A very dry and crisp Saison full of light fruits (orange, lemon, pear) and a welcomed tartness in the finish. Excellent beer for when you're ready to play small ball to change the pace up from the big game a bit.

Hazy pale gold with a steadily rising mist of tiny bubbles. Lasting head and arcs of spotty lacing dance around the glass.

Light Brett in the aroma, musty hay and cheese rind, Belgian in character.
Tart and mildy fruity, clover honey, lemon, pear, oak in the aftertaste.
Medium bodied with ample carbonation. It’s good, maybe not the most complex, but a quality foederbier.

Sour but dry, good beer unique. A sour for those that enjoy fingerless gloves. Simple but worth trying

Tasting in words: desert with a little water.

definitely one of the best and most simple beers i have had from these guys. everything seems to be super imperial in strength and aged in some esoteric barrel or whatever. it nice to have a really straight forward beer be this good, it gives me more faith in this operation. glowing pale golden saison with a tall white head from the tap. on at crafty fox and the first i have seen of their kegs in colorado. its got a great aroma, almost corny in the mash, more complex than some, oaty and wheaty and sort of built like a grisette when i think about that style, with a lightly funky mixed smelling yeast, belgian meets new brett i would say, although im not sure this is wild at all. awesome yeast taste up front, lemon zest and lemongrass, green tea herbaceousness, a light delicate floral blossom element, and some sweeter richer grain for its color, round feeling and not insanely dry, but still quick finishing. maybe corn, even rye, its very cool and id love to know more about the malt makeup of this, simple as it seems its got layers. seems dry hopped too, citrus and grass there, all super fresh in the end, and a nice rush of bubbles to finish it off. this is great beer, sessionable forever and the kind of saison i am choosing to spend my time with right now. one of the better american solera beers i have had to date.
