A little more than a year ago, this blend of our 100 percent spontaneously fermented wild ale was inoculated overnight in our custom-made coolship. We then refermented in the bottle, resulting in a complex, truly wild ale with notes of stone fruit, honey, and loads of barnyard funk.

750 mL bottle. Pours mostly clear golden. Smells of oak, citrus acidity, grainy malt. Tastes of sharp citrus acidity with some sour stone fruit. Very oaky. Sourness builds to a sharp finish. Well carbonated. The back end is a touch too sour, but it's otherwise a very nice oaked golden sour.

Poured from 750ml bottle into glass.
Clear, pale gold colored body. No real head, and no lacing.
Aroma and taste both express white grape, green apple, and the acetic acid of vinegar. There is a very brief taste of sweet honey but this is quickly displaced by the tartness, and close to a sourness at the end of the taste profile. As the beer warms a bit, there is a taste of apricot. Underlying all is a moderate funk, which is a reminder of the wild nature of this beer.
Moderate mouth feel, but quite dry and crisp. Good level of carbonation.
This being Wild Mind's first coolship attempt, I will be sure to try others that follow.

Pours a very clear, lighter golden color. There's almost no head. What little there was, was white. No lacing on the glass with the minimal head. Retention was minimal.
The nose is very floral, wild smelling, and funky in a good way.
Taste - nice sourness up front. It is a wild sourness to it. Slight tartness to it, like tart cherries. The tartness increases as the beer warms up.
It's a 5.8% beer, but it's actually quite full bodied. The tartness really lingers on my palate.
Solid coolship wild ale. Really hits all the good notes, and, if you're a fan of the style, I recommend it, if they have it again.

Nose is tart white grape, sour apple, pear and yeast. Moderately aromatic. Spritzy, sweet. Beer opens puckering. Notes of green apple, lightly sweet vinegar, white grape, champagne tartness and a distinct woodiness. Yeasty at the end and finish with big green apple puckering tartness. Intense. Body is light to medium with ample carbonation. Prickly on the palate and aggressive and sparkling going down. Intensely tart aftertaste.
A nice beer overall if a little one-dimensional. Worth trying but I'm more interested in the fruited version.
