This sour uses our base Pilsner malt and flaked oats along with our house wild yeast culture. It spent close to 18-months in red wine barrels and after it developed the right funk, we moved it to our blending tank were we added 500lbs of strawberries and 30lbs of hibiscus flowers letting it referment over the course of 2 additional months.

According to their website, they’re using a Pilsner malt base and the house yeast in this one. Anyway, on tap at the brewery, this pours a beautiful bright ruby raspberry red with a thin ring of white foam. Nose is a little disappointing, all things and ingredients considered...some juicy strawberry and red wine oak barrel, but it isn’t terribly prominent or layered. On the taste, there’s a lot more to work with, fruit that is kind of heavy and meaty, some oak, vinous but also tart, a little flowery fragrance but that part is pretty subtle. Modestly tart, not very sweet, middling body and carb. Finish balances between the tartness, the meaty strawberries, and the barrelly echoes of oak. Nicely done.

Poured from 750ml bottle into glass. Beer was released at the tap room on 6/16/2018.
Clear, crimson red colored body. Each pour brings out a short lasting fizzy, pinkish colored head. No lacing.
Strawberry and lemon in the aroma.
Taste follows the smell with the berry flavor of strawberry and hibiscus, and lots of tart lemon. No bitterness. Has some small aspect of red wine.
Medium mouth feel, rather a teeth scraper. Dry finish. Good carbonation.
Beautiful color for appearance. Described as a barrel aged fruited sour, the beer experience matches. Other than the dry finish, there is a low perception of funk. A flavorful beer but not overly complex.
