Fermented in barrels with our wild yeast, Wind In The Willows brings together farmhouse funk with the tangy sweetness of apricots. This tart Rye Saison is bright and complex with notes of fresh apricot jam.

Poured from 750ml bottle into glass. Released on July 14, 2018.
Cloudy, dark apricot colored body. Some fizzy bubbles upon pouring but no head. Just a tiny ring fed by rising bubbles. No lacing.
Aroma of funk - farmyard, leather, tobacco, and grass. Hints at a whiff of smokiness. Sweet/tart apricot flesh and skin.
Has an overall sour taste. The gamut of apricot flavors is present, from semi-sweet, earthy, and tart. The yeast yields the farmhouse funk of leather and hayloft hay.
Medium mouth feel. Lower carbonation. Very dry finish, more of a tongue curler than an enamel scraper.
Certainly shows the wild yeast with the sourness. Not real refined or mature, rather it is bold and extremely expressive. The aroma is the star of the show here. It is pleasing to see the progress of this brewery (being the second beer Wild Mind ever bottled (back in April 2017)). Very encouraging looking forward, as refinement, blending, and experience lend themselves to ever more complex and challenging/funky beers.
