This Imperial Stout was brewed with the intention of reproducing the depth of flavors in a mole sauce. There are many varieties of mole sauce, some containing up to 30 ingredients, and this one is based on a mole dulce. It checks in at 20 ingredients with seven grains, two hops, one yeast and 10 other spices. This has robust malt flavors of cocoa, coffee and dark fruit in a full, sultry body. The addition of cinnamon, nutmeg, cloves, cardamom, almond, ginger, raisins, vanilla, cocoa nibs and ancho chiles meld into that body and come across on the palate with a rounded spice character. With how much is going on, this stout leaves you with a singular and distinct impression that we hope reminds you of mole.

Poured from crowler into glass. Fill date is '9/27(2018)'.
Black colored body with the slightest of a mahogany edge when back lit. Thin tan head with thicker ring. Leaves behind an oily pattern of lacing.
Aroma had a range of spices that lay on top of dark roasted malts. Chiles are also there.
Taste has a sweetness from roasted malts, with spices of cinnamon, cardamom, nutmeg, and cloves layering in. The back half expresses with milk chocolate. The ancho chilies add a note of heat and vegetal matter. There is also vanilla and some dark fruit flavors.
Body is medium to full, with an oily feel. Okay carbonation.
This beer has a complex set of flavors, based on the all the different additions added to the basic imperial stout recipe. The beer is mole-like, and quite easy to drink. This may pair well with your choice of mole and meat recipe, and may be a good ingredient to add to the recipe.

Pours a dark mahogany with a tan head. Smell was sweet milk chocolate and roasted malts cinnamon and nutmeg. Taste had a creamy chocolate and roasted malt flavor notes of vanilla with cinnamon and some dark fruits . Mouth feel was a tad but sweet and tasty with spice and some pepper. A delight to drink.
