This spontaneously fermented, foeder-aged sour was transferred to used Cognac barrels where it aged on fresh kumquats. The citrus and Cognac notes combine with the barnyard funk of the base sour to create a rich depth of flavor in this dry, lightly tart sour.

750ml bottle. Capped and corked bottle.
Slightly cloudy, gold colored body. Just a few bubbles come with the pour, no head and no lacing.
Lots of sour citrus in the aroma, just like tart kumquats. Cognac bottle contributes, and there is a little funk in the background.
Taste is sour sweet with the blend of kumquats and cognac barrel. The end of the taste profile opens up quite a bit to express the aromatics of citrus pith and oak barrel. Has a dry finish. The funk also blends in with some leather and tobacco, and a faint mention of rubber.
A little less than medium in mouthfeel. Has a enamel scraping effect on the teeth. Okay carbonation.
This beer expresses some complexity in smell and taste, with the different components rising up to express at different points of having the beer in the mouth. I like the sour sweet at the beginning and then the dry finish that releases a bloom of aromatics and funk at the end. The dry tobacco and leather lingers in the aftertaste. This brew made good use of kumquats and the cognac barrel.
