Thicket of Shrubs is a golden sour base fermented with our resident microflora in oak barrels up to 18 months. It is then transferred to one of our 90-gallon oak blending tanks where it went through a secondary fermentation with raspberry and pomegranate. The sweet pomegranate balances with the tart raspberry to round out a sour with modest acidity and a slightly tannic finish. Corked, crowned and naturally conditioned in bottles for 5 weeks to allow added depth and flavor.

750ml bottle. Capped and corked bottle. One of the 2019 offerings from The Forgotten Barrel Society.
A combination of cranberry and cherry red colored body. A one finger off white/pinkish head dissipates in about ten seconds. The surface and edge is quite active with rising bubbles. No lacing.
Aroma is one of berry, and could be blueberry, cherry or a little raspberry. Really filled with aroma.
Taste is slightly tart, with an emphasis on berry fruit. Cherry and raspberry is what I get.
Medium mouth feel. Has a bit of a bite with each sip. Excellent carbonation.
Mellow, well balanced, and expressive at the same time. Quite a lovely concoction.
