In champagne making, "Taille" refers to the juice from a second pressing of the grapes, as opposed to the first pressing, or "Cuvee". Our "Taille" was produced by blending foeder beer on top of spent Pinot Grigio grape skins and stems from a previous fermentation. The three foeder beers selected for this blend were chosen for their moderate brettanomyces expression and softer acidity that we felt would compliment the tannins left in the grape skins. The resulting beer has a depth of fruit flavor ranging from black cherry to cranberry, and even dried fruit such as raisin and prune. The grapes in this were first used in "La Rose Blanche" and these two beers, while sharing many common traits, are quite unique in the flavor.

I am drinking this on tap at Tilia. It is a one-off beer that the brewery offers to select customers. It is brilliant amber gold with a moderate lemon smell. It is wonderfully fruity and tart and goes very well with the fish taco torta I am eating. The tartness of the beer matches and intensifies the tartness of the coleslaw on the fish.The beer is crisp, medium plus effervescence, citusy and perfect with the food.
