An experimental dark spelt lager. Fermented cool in stainless steel before being transfer to our horizontal oak foeders to be conditioned with our house mixed culture to develop some pleasant barnyard funk and strawberry fruit leather notes. Finally, blended with Cabernet Sauvignon juice to referment and achieve a strange harmony and deep ruby color.
