HELIUM is a sour (pH 3.2), dry (fully attentuated) and fruity (lemon & peach) beer which has been kettle soured by various strains of lactobacillus, including the natural cultures existing in the malted barley grains which are added to the kettle during the acidification process. The addition of peach purée delivers a further fermentation and a soft fruit profile and the selection of a characterful Belgian ale yeast gives both citrus esters and a peppery spice. It is part of a special six-pack of beers—the Noble Gas Project—created with twelve other breweries to celebrate the third birthday of Siphon Brewing.

Pours a hazy, deep golden amber coloration with a small, fizzy head. Smells of tart, ripe and juicy peaches and zesty, acidic lime. Taste follows the nose, with a great balance of juicy, tart peaches and zesty lime citric acidity as well as just the merest hint of soft wheat malt and estery yeast, with just a touch of green apple. Finishes with a medium tartness and acidity and some peach and lime lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.
This is a Kettle Sour, so no great complexity is expected, while it does have an excellent balance of vibrant fruity notes and tartness/acidity, with just a touch of soft wheat malt and estery yeast.
