i started a little up and down on these guys, but over the last year or so have really come around on a lot of their stuff, i also think they have improved a lot over time. i have been meaning to get in here for some beers for ages, but they keep really limited hours so it has lined up until now. its a tiny space, i really couldnt even believe how little it is, off the beaten path too, just a small wooden sign to mark the place. a few chairs outside roped off in the parking lot, but i would hardly call this a patio. inside its dark, low lit, few windows, almost cluttery looking with the small brew system in the back among some barrels, patrons pack out the handful of tables they have. they had a solid list, maybe eight or nine flavors available, but only a few on draft, and the bottles are pretty expensive, so its somewhat of a limiting factor for trying them all and getting out of there for a reasonable price, but i get that these are small batch beers, mostly wild, and process intensive, so i tolerate it. the beer is excellent, meager has become one of my favorites for sure, and they also had a dry hopped version! i very much liked all the beers i had here, but the garden ghost dark brett saison with blueberry juice and lemon zest really stood out to me as amazing, along with the pride of province, which was a bretty strong amber, biere de garde type, the beers here are all funky and dry and bubbly, both from tap and bottle, they have it down in terms of feel and finishing. the space is fun and mellow even when its busy, and the service was kind and attentive enough. ill work these guys into the regular rotation of breweries i visit, their beer is getting awesome! so glad i finally made it in, we all loved it. more draft would be better, but its hard to complain.

Cellar West is off the beaten path in Boulder and still flying under the radar somehow. The taproom was completely empty when I visited, but I still had excellent conversation with the owner and a dude packaging bottles. There's not much of an outdoor space and the bar is pretty standard, but that can all be overlooked easily due to the quality of the product.

They only had one beer on tap at the time but any beer can be bought in a bottle and opened at the taproom. I tried two beers there and took two to take home. Both beers I had there were fantastic and up to the quality standards of MUCH larger and more established breweries.

I'm pretty sure this place is going to explode, so come check it out before the hoards arrive!
