Three year barrel-aged blend conditioned on Masumoto Spring Lady, Gold Dust and Sun Crest peaches.
This beer is a culmination of three different years of Chat Flou, consisting of beer from 2017, 2018 and 2020 batches. Inspired by Belgian lambic brewing, the idea behind Chat Flueuze was to blend three years of our peach season to create a layered experience that features maturity, complexity and brightness. Our goal was to keep the Masumoto peaches at the forefront as the main star of the show, while presenting barrel character and complexity from our house wild yeast. We blended beer aged in French oak red wine barrels for balanced acidity to achieve what we feel is a beautiful and elegant saison. Bright, fuzzy peach skins dominate the aroma, and the wild yeast lays the ground for complex funk, rustic oak, juicy peach and balanced acidity to play in harmony as each sip is savored.
