This collaboration with Speciation Ales was born on a long bus ride somewhere in Denmark, a concept in which each brewery would create a rum punch inspired sour beer by “drafting” five different fruits from a predetermined list.
Our version is a mixed culture golden sour aged in rum barrels, blended into a fruiting vessel to age on plum, boysenberry, lemongrass, blueberry & apple, then bottle conditioned with champagne yeast.
