Sour ales blended after ageing in French oak pinot noir barrels for over three years, refermented on red currants for three months, then bottle conditioned with champagne yeast.

750 mL cork and cage bottle, quite bubbly and audible on the pour, which is a pale coppery-pink. Bright strawberry, currant, lemon and honeydew on the nose, with moderately acidic lacto presence. Tart with substantial oak and tannins on the palate, strong expression from the red currants, but a light dry finish from the champagne yeast. Stunning, well worth the higher price tag and the 3+ years spent in the making.
