At its core, the collaboration of Homes, Foam Brewers, House of Fermentology and Freak Folk Bier is a strongly cider-like, winey and sessionable thirst quencher with a ton of understated complexity.
Nucleate's 2021 rendition pours sparkling, straw, chrome and quite champagne-like. As its spritzy froth rises and falls, the bold aroma of lemon is complemented with other citrus, white wine, cider, dry funk and perfumy fauna. Scantly sweet, the ale hits the tongue with a hint of honey, wafer and sourdough before dissolving quickly off the early palate.
The fruit takes full control as the ale embarks upon the middle palate. Bold lemon flavors extend into orange peel, grapefruit and lime with a backdrop of dry white wine, dry cider with the building sourness of gooseberry, kiwi, white grape and crabapple. As suggestions of dry burlap and weathered oak add a pleasant tannic bitterness, the finish looms with the bitterness of hay, verbena and lemon peel.
Light, crisp and highly refreshing, the sheer acidity of the ale proves to be thirst quenching, effortless on the palate and peppery with pop-rocks bubbles. It carries a quick finish with brief echoes of brine and burlap.
