Parting of the clouds, trumpets sounding and a sense of calm coming in waves of majesty- well... that's the alcohol talking as Barrel Theory and Homes breweries team up for a heavenly collaborative stout laced with chocolate, granola, maple, nuttiness candied sweetness and whisky.
Inky black with tawny edges, Saint Pauly may be shy on foam but settles in motor oil fashion before seducing the nose with a host of bourbon laden sweetness, coffeehouse aromas, savory maple, hints of port wine and chocolate. The complexies of the session are just getting started as the early palate is rife with those promised maple, caramel, vanilla, chocolate, molasses and brown sugar candied sweetness.
And a complete slather of the tastebuds as those densely packed malts wash the middle palate with grain sugars, candied pecan and granola additions. Savory, sweet and toasty with sweetened espresso, chocolate covered coffee beans, vanilla, caramel and toffee, the beer is a nearly perfect blend of sweet and savory. Trending warm with kahlua-like flavors, a soothing spice of vanilla coated bourbon, toasted oak and sherry soften the finish despite its power.
Full bodied, chewy and pleasantly cloying, the stout finishes long and fat with malt sweetness as those booze soaked malts cling onto the soft tissues of the mouth in cake batter-like fashion. A warming finish and an extended dessert aftertaste makes this beer a perfect after dinner digestif.
