The Leafcutter bee is named for its nest built from snippets of leaves, a species from central Europe that was brought to North America to pollinate the notoriously difficult alfalfa flower, but has since proven equally adept with other crops such as canola and blueberries.
This beer also finds its origins in central Europe, in the ales of Köln, Germany. They lead with delicate pilsner malt, followed by prominent hop bitterness in the finish. Though the yeast is technically a top-fermenting ale strain, it is unique in that it works at cooler temperatures, producing a clean, crisp fermentation like a lager. We've adapted this style to our American tastes by sprinkling in Washington-grown Simcoe hops–the kind of leaf IPA lovers would build a nest out of.

Poured from 12oz can into a dimpled mug. Date stamp on can is illegible.
Appearance: pale straw hue with a dash of haze and a finger of frothy eggshell foam atop.
Smell: lightly grainy malt with a little yeastiness and a little bit of a dry/astringent finish. Not too bad.
Taste: a little sweet and a little grainy with a lager-like yeastiness and a bracing bitterness that is to the fore but nevertheless not overdone. It’s not bad, but between the bitterness and the grainy, more astringent element, I feel like this beer lacks a bit of smoothness.
Mouthfeel: medium body with a good level of carbonation and creaminess.
Overall: not too bad of a Kölsch, although with a bit of edge taken off that graininess it could be really super drinkable.

Poured into a Uerige stange. Pours a faintly hazy, light to medium golden amber with a one finger, somewhat fizzy, white head that nevertheless has good retention and lacing. Aroma of grainy malt, wheat, light grassy hops and a touch of lemon. Flavor follows, with grainy, wheaty malt, grassy hops with a touch of citrus, lemon and a little honey. Slightly astringent hop bitterness in the finish. Medium bodied with light creaminess. A serendipitous find while picking up some Cuban takeout, this was on the counter and I had to grab this new-to-me Washington brewery. Hits all the notes for a grainy kölsh, the malt seems spot-on. The hop are on the wild side of grassy and have a bit of stark astringency in the finish. Authentic tasting although a little on the thin bodied side. Apparently brewed for Watts by Hale Brewing. The brewery owners apparently have a bee farm and I'd certainly like to see some honey oriented brews coming from them.
