Carpenter bees, genus Xylocopa, are some of the biggest, most powerful bees out there, and the majority eschew vibrant colorings for a simple, deep black. We set out to brew a beer befitting this namesake: a potent stout in the darkest shade of black.
This beer is built around a robust combination of dark roasted barley and black patent malt. The black malt is toasted as dark as possible, pushed right to the edge of burning, but quenched at the last second to prevent combustion. This intense roasting process develops the black color in the malt and the dark roasted flavors, but also paradoxically drives off the harshest aspects of the toasted character. What remains contributes a smooth, focused, coffee-like flavor to the beer.
The roasted barley we use is made in a similar fashion, but instead of being malted before roasting, it is roasted raw. This slight change in process gives the roasted barley a wilder countenance, with more aggressive bitterness and a rough dark cocoa type of flavor. When paired with the black malt, its edges serve to add both depth and excitement to the roast character of the beer.
These dark grains balance their layers of roast, cocoa, and coffee against the rich backdrop of malt sweetness and the smooth, creamy texture provided by flaked barley. Tie it together with a subtle whiff of alcohol and and you have an intense yet alluring package that the Xylocopa can be proud of.

Black colored body, with a mahogany brown colored back lit edge. One finger of khaki colored head, and this results in a bubbly cap and high ring. Leaves behind lacing webs.
Aroma of dark roasted malt, a bit of molasses and char, and dark chocolate.
Taste is sweeter than the nose but still concentrates on the dark roasted malt and dry char. Dark roast coffee and dark chocolate are contributors. Aftertaste mellows a bit but continues with the dark roasted malt, dark roast coffee (albeit with a little cream), and dark chocolate.
Medium mouthfeel. Slight metallic note and very dry finish. Very good carbonation.
Dramatic appearance of black color, long lived surface foam, and glass lacing. Taste stays the course with dark roasted malts (coffee, chocolate, and char), and a dry finish. Named after a genus of bee.

Poured from 12oz can into a dimpled mug.

Appearance: rich, dark brown hue that barely lets any light through. Head is a thin finger of creamy tan foam; it looks really good, although a bit more head would be lovely.

Smell: malt is quite sweet with a fair bit of roast and kind of a vanilla custard thing going on. It's good, but it's a bit sweet for my taste.

Taste: again, rather sweet malt with a bit of vanilla and a nice bit of roast. The roasty finish is what sells me on this -- it dries out toward the end so you're not just bombarded with sweetness the whole time. Nice.

Mouthfeel: medium body with a good carbonation and a good creaminess. I like it.

Overall: a solid stout. Perhaps a bit on the sweet side, but it's balanced enough to be quite drinkabe.

Poured into a Fremont small snifter. Pours a very dark mahogany brown, appearing opaque black in the glass with a fine, quarter finger dark khaki head with great retention and solid lacing. Aroma of dark toasted malt, coffee, light biscuit, cocoa and molasses. Flavor follows, with dark toasted malt with moderate char, drip coffee and dark chocolate with just a touch of hops in the coffee and chocolate finish. Medium bodied with light to moderate creaminess; nice mouth feel. I approach reviewing mid-range ABV stouts with caution because most I drink now are barreled or other high octane versions and try to give them the benefit of comparison. No need here, this is full flavored, has a sturdy charry malt base and quite good chocolate and coffee notes. The mouth feel and look are excellent too. I like this a lot. My first beer from Watts was a Kölsch, which is a laid back style and it was OK. This is great and I look forward to checking out more from this brewery.
