Hops: Mosaic, Cascade
Mosaic hops are just delicious. Like its mother Simcoe, Mosaic is an incredibly multi-faceted variety, hitting all the highlights of American hop aroma and flavor in a single strain: fruity, citrusy, piney, resinous, and floral. But its most interesting attribute is the unique blueberry character I haven't tasted in any other hop. This is everybody's favorite hop, and now you too can see why.

Poured into a Seattle Beer Week pint glass. Pours a medium golden amber with a one finger white head with great retention and nice lacing. Aroma of pale and lightly caramel malt, citrus, piney and fruit hops, orange, grapefruit, mild pine and mixed tropical fruit. Flavor is pale malt, citrus and mild piney hops, orange, grapefruit, light pine with hints of mixed fruit esters; mildly floral. Medium bodied with light to moderate creaminess. A quite nice West Coast style IPA with more citrus than pine, but with some interesting fruit hanging in the background. Mosaic is a bit too busy for me and can seem muddled, but is well presented here. Solid bitterness. One of the better Mosaic IPAs I've had. Watts seems to do a good job on each of their styles. I'll be watching for the other hop varieties with this base ale.
