Our new Witbier has the original base of Pils malt and 15% oats boosted by way of 40% wheat in the grist, and we also modified the mashing, fermentation and maturation regimes to do the style justice.
The result: a beer with a soft, pillowy mouthfeel, low bitterness, subtle glowing haze, and citrus notes from dried bitter orange peel and freshly ground coriander added to the kettle.

Had on tap. Cloudy yellow body with two fingers of white foam and globs of lacing. This is very hushed in that everything is so tempered down: wheat, citrus, coriander, and floral tones all there in smell and taste, but you want more. Taste and feel have a yeast that is too robust for the style, cutting into the flavor and the necessary wit finish.
