Polycephaly 6 was inspired by the current dynamic and exciting mixology culture. Wine barrel-aged rye and wheat-based Saisons were combined with a gin barrel-aged Sour ale. The base blend is conditioned on hibiscus & infused with key lime juice. Polycephaly 6 has a beautiful, deep pink hue that is accompanied by intriguing herbaceous notes, acidic citrus jabs, and refreshing floral qualities.

16.9 ounce bottle, 2019 vintage. Served in a chalice, the beer pours a slightly hazy amber/reddish color with about a half inch off-white head. Head retention and lacing are both good. Aroma is nice, the brew smells like lime, hibiscus, dark berries, red grapes/wine and oak. Taste is pretty much just like the aroma, but there's also the addition of some herbal, tart citrus and bready malt flavors noticeable too. Mostly tart tasting! Mouthfeel/body is medium, it's coating and easy to drink with a good amount of carbonation. I thought this was a good sour ale, certainly worth picking up!

Complex herbal peppery funk pairs with a touch of barrel oak as tart blackberry-esque and red grape fruits complete the picture.
A mild floral bitterness accented by lime zest comes out on the exhale after the nearly tanniny dry finish. At times it gives off hints of floral gin and vinegar, without the acid, while other times it's like fruit punch.
