Polycephaly is the rare condition of having two heads. In partnership with Winking Lizard Tavern, we present 2 distinct beers. A bold pairing of fruity sweetness and bright acidity provides a perfect balance to our house mixed-fermentation Saison. Polycephaly 8 was refermented on juicy blackberries and conditioned on tart lemon zest, illuminating the herbaceous notes of our house-mixed culture.

Put about 3 years on this one before I cracked it. My read? Good choice.
A - Pours out a clear, dark burgundy body, ruby highlights and purple undertones, with an off white head with a subtle mauve tint, quick fade and minimal lacing.
S - Strong hit of acidity in the open, berry notes over a stronger fermentation core, with a bit of plastic signaling the wilder edge of the ride.
T - Full splash of berry fruit over less specific sour acidic notes, hints of cranberry presumably from the combination of features, and a soft funky finish, with lingering zest and subtle tannic bitterness.
M - Decent carbonation, moderate weight, lingering acidic bite, and a bit of building presence on the tongue over time.
O - This is a mighty fine Wild brew, with great fruit notes that ride over the acidity and funk that rewards careful drinking. The depth is there, but this is also a satisfying brisk drinker, if that's what you are looking for.

Dark but clear garnet with a short off-white to mauve head that fizzles out to a headless but bubbling surface.
Holy shit this tastes just like a fresh scoop of sorbet. An abundance of wonderfully pressed blackberry is further smoothed out by a sweet expression of lemony syrup as its silky yet effervescent medium body comes to an herbaceously semi-bitter, semi-dry finish.
There's even a hint of creamy vanilla bean in this deftly balanced, mildly sour ale, which blooms even more expressively, and even lusciously on the nose. It bears repeating, the acidity is far more measured here than several of the other sours they've recently released.
