Nine unique barrels of Imperial Stout from deep within our oak cellar were carefully chosen to create this thoughtful blend. These exemplary barrels were set aside for extended aging from 18 to 25 months. Serve at cellar temperature to unleash notes of nutty cacao, honeycomb toffee, and marzipan.

This beer pours black and is topped with a scant, mocha head that leaves no lacing.
Dark chocolate, anise, caramel, vanilla, and oak. All kinds of shit going on with the aroma. Very nice.
Dark chocolate, caramel, vanilla, and anise greet my palate. I get some oak in the finish.
Full bodied with an oily, yet dry, mouthfeel
Jackie O's kills the barrel aging game. Great stuff.

I found this to be delicous, there was like no foam whatsoever so the look was a little "meh" but not worth sacrificing my "perfect" rating for. This had an excellent big full body and had notes of chocolate, coffee and a sweet like creaminess. Which albeit is typical but idk this was just excellent.

Dark brown syrupy looking pour with no lacing and no carbonation. Aroma is toasted coconut, cocoa, oak, delicate molasses smell, and some brown sugar. Brown sugar, toasted cocoa, Bourbon, oak, some cocoa sweetness, and light molasses. Mouthfeel is thick and syrupy and leaves a residue on the lips that is sugary sticky. Overall, this is a fantastic beer that's worth checking out.

12.7 ounce bottle, 2021 vintage. Served in a snifter, the beer pours dark brown/black with about a half inch tan head that stuck around a little while. Decent amount of lacing. Aroma is nice, the brew smells like vanilla, bourbon, brown sugar, caramel, fudge and roasted malt. I think the taste is similar to the aroma, but there's also some oak, toffee, dark fruit and nutty flavors noticeable too. More of a sweeter tasting imperial stout, but not overpoweringly so. Mouthfeel/body is medium/full, it's coating and a little bit creamy with a moderate amount of carbonation. If you like sweeter tasting imperial stouts then this one is definitely worth trying. I know I liked it!

Cellar Cuvee 13 from Jackie O’s. 12.7 oz bottle purchased from Jackie O’s online store and received 2/2/22. $ 15.82/ capped bottle, $ 1.246/oz. Stored at 40 degrees after purchase. Reviewed 12/2/22. Note that I use DD/MM/YY protocol.
Bottle stamped on rear of label “2021”. Served at 55.5 degrees in a hand washed and dried Jester King snifter. Final temperature 57.7 degrees.
Appearance – 3.5.
First pour – Ruby Brown (SRM 24), opaque.
Body – Deep Brown (SRM 30), muddy and opaque. When rear-lite, same, but edges are ruby.
Head – Small (Maximum one cm, aggressive center pour), mahogany, fizzy and little retention, quickly diminishing to a two mm crown and no cap.
Lacing – None, but at 12.4% ABV lacing wasn’t expected.
Aroma – 4.25 – Dark chocolate and bourbon predominate, no hops, no yeast.
Flavor – 4.25 – Distinctly sweet. Not so much dark chocolate as milk chocolate with bourbon barrels. No hops, no yeast. Moderate ethanol (12.4 % ABV, as marked on container) taste or aroma. Mild gastric warming occurs. No dimethylsulfide or diacetyl.
Palate – 4.25 – Seems thin for an Impy Stout, smooth and short of creamy (bordering on syrupy), barely noticeable carbonation.
Final impression and summation: 4.25 Looks like a typical RIS or Impy stout. Aroma is mostly dark chocolate with some mediocre bourbon present. Tastes of dark chocolate and bourbon, not bad. One I would drink again but probably not buy at the present price point.
