Imperial stout aged in bourbon barrels for 16 months.
Brewed as our final batch of 2020, Bound by Dust features a grain bill brimming with the best English, German, Belgian, and American malt available. After a sixteen month long rest in high-rye Bourbon barrels, this tremendous stout delivers robust notes of German chocolate cake, baking spices, toasted caramel, and figs.

Here's another selection from the fights at Adam's place back when he was single.
Black pour. Brown head, dissipates, leaves just an outer ring on the taster glass. But its a hefty one. The aroma is right up Aman's alley, big barrel whiskey notes, heavy roasted malt, cigar tobacco. It was fresh but it had that elder statesmen vibe throughout.
The taste brought heavy barrel notes, sweet barrel on it. These were both wet and aged for almost 2 years. So big impact. Thick ass stout like the Skankin' Pickle song in the mouthfeel. Great song. Its boozy. Big char to it but the Heaven Hill sweetness helps getting it over. Usual dark fruit and dark unsweetened candy/toffee/caramel underpinnings. I think the beer hit for the group more than me, we're just so oversaturated with big imperial stouts in barrels going for big time abv. I prefer a little less barrel for that sweet spot like Central Waters does.

small can from the source, summer 2025.Very good bourbon sweetness even cold, more barrel more wood as it warmed. Pretty good, unwarranted criticism of mouthfeel, it was above average. A smooth sipper.

Light carbonation with an above average body, creamy and oily
Aroma is a massive hit of bourbon,boozy, some wood, maltreatment dark bread with a bit of char and wood
Taste boozy and bourbon out front but otherwise it doesn't stray too far from the aroma

Picked up a 2022 375ml bottle from the brewery 5-24-23. Reviewed on 7-10-24.
Beer poured black with an okay tan head that dissipated pretty quickly.
Nose is very nice, getting notes of chocolate, vanilla, and bourbon.
Taste is spot on as the large medium roasted malt base with notes of chocolate and absorbs and displays the rye spiciness along with a touch of vanilla. Finishes balanced with that spicy rye kick.
Mouthfeel is medium to heavied bodied and very smooth.
Overall i love the balance and the straight-ahead nature of base beer meeting barrel. Nicely done!

Pours a mostly opaque dark brown, with a brief head and some oily cling. Aromas of bourbon, oak, vanilla, chocolate, raisins, some tobacco, light char, a little licorice. Flavors of bourbon, oak, malt, chocolate, vanilla, light tobacco and licorice. Has a little bit of a spicy taste. Smooth, a very good fuller body, appropriately carbonated.
A delicious example of a barrel- only beer. It’s barrel forward, but there’s lots of great and distinct aromas and flavors to pick out. Well worth the purchase, really enjoyable.

Bottled 2022. Purchased at brewery 2023. Poured at 57°. Tight tan head with mixed bubbles sits atop black with ruby edges body;poor cap retention leaves a fleeting island of micro dots; brief solid ring; no lace, no legs. Bourbon and chocolate nose; dark fruit as beer warms. Sweet chocolate, bourbon, plums, figs; mild oak middle; sweet toffee finish. Smooth feel; not adjuncty; bite on tip of tongue; medium body; light carbonation; mouth warmth from 13.3%abv; dry barrel finish. Overall quite tasty; layers of base and barrel flavors; a tad thin, but that’s JO’s; long wooden/oaky linger. A limited release…I’d buy again if our paths cross…

Poured from a bottle at fridge temp. Pours motor oil black (and thick!) with zero head. The nose is amazing. Chocolate, marshmallow, vanilla, bourbon, fudge, and a hint of brown sugar.
The taste is equally as good. Milk chocolate, a hint of black licorice, maple, dark bread, plums, and raisins. Intense on the taste given the lack of carbonation and ABV. Over time there is a bit of a roasty note. Not a ton of bourbon barrel on the taste, but it's definitely there. I like that it's not overpowering. Just the perfect balance.
Mouthfeel is thick and viscous. Aftertaste is malts and chocolate.

On tap at Saraveza today. Surprised to see this on tap here in PDX.
The beer pours a blackish bown color with pretty decent head retention and light lacing. On the nose, there's an impressive aroma of bourbon, vanilla, and dark chocolate. As good as this beer smells, it's even better on the palate. The flavor profile replicates the nose pretty closely in this fairly sweet stout, with considerable bourbon taking center stage. Mouthfeel is full, but this beer isn't at all heavy on the palate. There's a long, smooth finish to this beer, and the 13.3% abv. is very well integrated into the flavor profile. Carbonation is on the low side, but I think that works well for this beer and enhances the mouthfeel.
Really nice ba stout from Jackie O's. Their ba stouts tend to be spendy, which is annoying when they're nothing special. However, I don't mind paying the freight when the beer is this good. Very nice beer...

A - Dark brown / borderline black pour with thin toffee colored lacing outlining the tops. Lots of legs on the sides of the glass when the beer is swirled.
S - Big chocolate and fudge with a little bit of spice, dark fruit, oak, and drenched in Bourbon.
T - Chocolate fudge cake with raisins, figs, Bourbon, spice, oak, some dark fruit while ending on the sweeter side with a slight bit of booziness.
M - Light syrupy body that leaves a sugary residue on the lips and has some warming in the back of the throat.
O - There's some Barleywine pedigree in this one.
