After months of fermentation in stainless steel slowly developing its brilliant complexity, Terre Et Soleil Perpetum was then refermented on a gentle addition on Chenin Blanc grapes. A bright and brilliant acidity and tropical Brettanomyces funk pair with delicate notes of pineapple, pear, and stone fruit.

Sublime sour. Reminds me of the quality of Lost Abbey and Hill Farmstead. Light, herbal, tart, and delicious. Easy drinker, golden light carbonation.

This sample was sitting on the store shelf and my fridge shelf since at least last May. I really gotta start drinking more of my aged brews. This one could take it just fine but probably would have tasted similar in May.
It pours a clear yellow with bubbles at first but none later. The aroma is a superb champagne smell but it doesn't prepare you for the mouthful of tartness that comes with this. After a while it is your new normal, but it is a fruity tartness that I don't know where it came from!
Recommended, of course. This is a carefully crafted sour ale of which I am barely worthy.
